How to Cook Polished Rice

  • The Japanese traditional unit 1-Go corresponds to 180 ml.
  • Put rinsed rice and water (190-200 ml per 1-Go polished rice) into the casserole.
  • Soak the rice in water for 30-60 minutes.
  • Cook the rice over medium-high heat for 9-15 minutes until you see the strong steam coming out from the hole on the lid.
  • Turn off the heat and let the rice steam for 20 minutes with the lid closed.
  • Then, open the lid, and stir the cooked rice with a rice spatula.
  • Ready to eat.

How to Cook Brown Rice

  • The Japanese traditional unit 1-Go corresponds to 180 ml.
  • Put rinsed brown rice and water (300-330 ml per 1-Go brown rice) into the casserole.
  • Soak the rice in water for 60 minutes or longer.
  • Cook the rice over medium heat for 20 minutes with only the inner lid on.
  • Then, put the top lid on and cook over extremely low heat for 40 minutes.
  • Turn off the heat and let the rice steam for 10 minutes with the lid closed.
  • Ready to eat.

Use & Care

  • Designed for use on gas stove.
  • To clean a burnt casserole, let the water come to a boil in the casserole, add a tablespoon of baking soda, and simmer it for 2-3 minutes on low heat. Then turn off the heat, let the casserole cool and wash it (Hand washing is recommended).
  • Dry it thoroughly.
  • Do not use it for deep frying.

Nagatani Seito was established in 1832 and located in Iga, Mie, Japan. They specialize in production of Donabe casserole dishes.

Iga Ware (Iga yaki), which dated back from 1300, is one of Japanese traditional pottery. It is popular for its design and usefulness in cooking.
